Why is TONKATSU good.? It is because you should feel the meat is very soft and juicy even good Tonkatsu has very thick meat. There are a lot of pork dishes in the world like eisbein, wurst(sausage) in Germany,
Prosciutto(ham) in Italy, Jamón Serrano(ham) in Spain, Dongpo pork(東坡肉) in China, etc.,
but Tonkatsu pork has completely different taste, feeling even though it is cooked very simply.
There are many Tonkatsu restaurants in Japan . Although restaurant chain is available, I'd like to recommend individual one. Usually they are small but prior reservation is not needed or not available although it is better to have reservation for some restaurants.
Ueno area in Tokyo which is famous to have many museums and zoo is one of good place to have Tonkatsu because many restaurants are located there and some restaurants have very long history. Among them the following three restaurants are called the big three (御三家(gosanke) in Japanese) as historical good one.
1. Horaiya ,蓬莱屋
Their Tonkatsu color is a bit darker brown than usual one.
According to the restaurant, they invented TENDERLOIN Tonakatsu (Hire-katsu ヒレカツ) and also Yasujiro Ozu,famous film director loved it.

They have very soft Tonkatsu and I suppose they are one of innovator of thick but soft one.

3. Futaba, 双葉
Unfortunately it was shut up around 2012. I was sad because I loved the very juicy and delicious meat with light yellow bread (衣 (Koromo) in Japanese)
If you visit museum or zoo in Ueno, also please visit the Tonkatsu restaurant. Tonkatsu is suitable also for lunch.
