Found nice local deep Izakaya in Kyoto. Even for Japanese it was great experience.

I have been In Kyoto many times and I always enjoyed good foods with various restaurants or bars. Kyoto is also good place not only for sight seeing but also for having foods especially for Washoku,Japanese cousin. This time I found very good izakaya, casual Japan style pub, bar called Fushimi. Because I liked to have fish dishes and I heard they served good one, I visited. And it was true that we could have very good fish dishes but I was surprised with atmosphere of that. Just they have only a counter table where people sit in very narrow space.
One senior lady is managing order talking with guests supported by some young guys. Because guests talked each other , it was a bit noisy at the small restaurant so you might feel a bit busy but I was comfortable and could enjoy local nice Izakaya feeling.
They serve very good fresh raw fishes and also other meals like tempra , deep fried prawns, vegetables , etc. and small sushi pieces, etc. Each dish is large compared with usual Japan restaurants so please do not order many dishes once. First even I felt difficulty to find what I should order because they did no have menu book and we needed to see menu description on the wall in Japanese, which was not clear even for native Japanese. But I could manage looking at other people's dishes or talking with staffs. So foreigners should be difficult to order but I suppose young staffs can help you. Also two foreign guests were there although one could speak Japanese well.

Deep fried prawn, the size is large.

Raw bamboo shoot

threadsail filefish, Very fresh, after eating raw main parts,
rest of parts could be cooked like deep fired or boiled as miso soup

Overview of Japanese foods and what I'd like to introduce you

When you visit Japan, you should see there are many kinds of restaurants and at the restaurant also there are many menu even only for Japanese foods. In order to help you to understand Japanese foods and choose better restaurant and menu, I'd like to introduce overview of Japanese foods and how we can categorize it. Also it is to tell you positioning of what I'd like to introduce the detail as deep real information in following my blog later.

I made a chart to show the overview. Please see it to make you understand easier.
I'd like to classify Japanese foods under ways to cook as an aspect.

*for blue colored food specific restaurants are available

1. Raw (生(nama) )

As you might know we like to eat raw fish called Sashiimi and most famous food with it is Sushi which is vinegared rice with raw fish or other seafood. It is popular to have Sashimi in many restaurants and you can find it with reasonable price at Izakaya which is casual bar restaurant but Sushi is usually very expensive.

2. Grilled, Roasted, Fried (焼く (yaku))

This way is also popular and grilled fish is one of main food even in Kaiseki style. Also grilled eel ( Unagi ) is very popular, which is usually charcoal‐broiled. And charcoal‐broiled chicken(Yakitori) is one of most popular menu in causal bar as affordable one. Also it is popular to roast on a hot steal plate (Teppanyaki). Although in USA and Europe the Teppanyaki is famous as expensive dinner , in Japan usually it is rather affordable withOkonomiyaki ( a thin, flat cake of unsweetened batter fried with various ingredients ) and  Yakisoba ( fried noodle ). Takoyaki  ( ball shaped octopus dumplings) is also popular as light meal especially in western area like Osaka.

3. Deep Fried(揚げる(ageru))

With this way most famous one is Tempura which is deep fried prawn, fish , vegetable in a light batter and is also usually expensive.  As I wrote before, Tonaktsu (deep fried pork) is great delicious food and not so expensive. Also you can find many deep fried menu in a casual restaurant bar.

4. Stewed, Boiled(煮る(niru))

Because "Dashi" (Japanese soup stock made from fish and kelp) is one of the most important factor for the taste, we have many stewed, boiled menu. Usually it seasons with soy sauce. "Niku jyaga"is stewed with potato and meat (usually beef) and very popular at a casual restaurant bar.

5. Hot-pot(鍋(nabe))

We have the "Nabe" which is a hotpot cooked at the table and very popular especially in winter season.  There are many kinds of "Nabe" depends on which is put and with which it seasons and Sukiyaki is very famous with beef seasoned with soy sauce as expensive one.

I skipped steamed way because there are not so many menu in Japanese foods although it is available.

I made the chart with aspect with price.
The most expensive one is "Kaiseki" or "Kappo" which is style of food, serving and restaurant. If you visit higher class luxury restaurant, you might see this style with which many kind of dishes with some cooking ways would be served as a fullcourse meal. Also Sushi, Tempura and Sukiyaki are very expensive and we, local Japanese people have them with a special occasion or event and don't have so often. We have rather more causal and affordable foods as usual meal. Also one of casual affordable style of Japanese foods is rice bowl and also noodle is very popular foods so I put them on the chart.

I'd like to introduce the affordable and casual menu later because I would like you to know more about real deep Japan cultures.

Restaurant in SHINJUKU area in Tokyo

SHINJUKU area is the busiest town in Japan with a lot of shops, department stores and night life and somehow it is crazy town. But also there are some good TONKATSU restaurants.

6. Usaku, 卯作

It is located in main area of Shinjuku and diagonally opposite Barneys New York department store and close to Kabukicho. It is a bit difficult to find the restaurant especially if you cannot read Japanese and you need to find narrow stairs in the building and step up to the 3rd floor. The small restaurant serves very good TONKATSU and if you visit lunch time, you can have also reasonable lunch TONKATSU teishoku.

How to enjoy TONKATSU .

It is common that the plate of the meat has thin sliced cabbages. Also usually it is served with rice and miso soup, which is called Teishoku.It is usual way to put saurce on the meat and cabbage but also recently some people love simple taste so that they enjoy just putting only salt. There is specialized sauce called Tonkatsu sauce which is sweeter and thicker than British Worcestershire sauce. Also a squeeze of lemon and/or mustard can be put on the meat as you like.  Those spice and source are available on your table.

Restaurant in OCHANOMIZU, KANDA area in Tokyo

OCHANOMIZU area which is walking distance from Akihabara, is famous as school zone and for many book stores both for new and secondary, sport shops and music shops but there are many traditional and/or small individual restaurants as well including TONKATSU restaurants. Among them one of our recommended is Ponchi-ken.

5. Ponchi ken, ポンチ軒

The Ponchi ken has been moved, transferred  from another restaurant called Frittsu located in Akasaka, Tokyo and we visited the Frittsu around 10 years ago and loved its deep fried pork (which was not called Tonkatsu and I think reason was  because the Frittsu concept was western style and not Japanese style.)  The restaurant space is not so wide with around 20 seats. When we visited early around 17:30, we can have seat without reservation but soon around 1800, the seats were occupied including some seats reserved. So we recommend to make reservation prior if you visit.
Also there are deep fried beef, meat Korokke ( frying mashed potato balls with meat similar with croquette) in the menu.

Address: Ohgi building 1st floor, 2 chome  8 Kanda ogawa cho, Chiyoda ku, Tokyo(35.694806, 139.763946, L/L for Google map)

How to fry TONKATSU.

Oil temperature and time to fry is key. Higher temperature makes the bread ( called Koromo ) dry and crisp but it is possible to make the meat hard. Lower temperature makes the meat soft and juicy but if the temperature is too low, the bread become wet and not crisp and it also could keep the meat raw.  Also depends on thickness of the meat, suitable temperature and time is different. Some restaurant fry two times with different temperature of oil.  So each restaurant has special  know how and a way to cook, which is secret.

Restaurant in ASAKUSA area in Tokyo

When you come to Tokyo first, you might visit ASAKUSA to see Sensouji-temple ( 浅草寺 ) which is the most popular temple in Tokyo. You should feel it's a bit touristic with many tourists and souvenir shops  with noisy atmosphere but there is a good traditional Tonkatsu restaurant which gives you good local and historical feeling with silent offstreet location . The restaurant is called Yutaka and it has established since over 60years ago.

How does the TONKATSU become delicious food

It's depends on restaurants there is way to make Tonkats delicious and it is secret of course. But I think the point is good selection of pork and how to fry it. There are many pork existing depends on what kind of pig, how old it is, where and how to raise, etc.

Example of famous pork.
-Kuro-buta: 黒豚 (Black pig) :
Kagoshima is famous prefecture for it.

-Sangen ton:三元豚:  Mixed by three kinds of pigs. Yamagata, Iwate, Chiba are  famous prefectures for it.
-Tokyo X:東京X: Tokyo's specialized pig
-SPF-ton:SPF豚
Specific Pathogen Free pig: Because of its safety some restaurants serve it with rare meat.

Restaurants promote what selection they cook sometime.

Restaurant in AKIHABARA area in Tokyo
AKIHABARA area
which is famous with electrical goods, Manga(comics), animation has also good Tonkatsu restaurant.

4.  Marugo ,丸五

It is popular restaurant and always crowded . They serve very good Tnkatsu with juicy meat. The color is a bit light and yellow, which means they use low temperature oil to fry. Because it is popular, you might need to wait for seating. If you don't have time, we recommend to have prior reservation.
